Oat kibbeh

Ingredients

Kibbeh dough

  • 2 cups Rolled Oats
  • 2 cups Bulgar
  • 1 tbsp Salt
  • ¼ tsp Black Pepper
  • ½ tsp All spice
  • 1 tbsp Coriander
  • ½ tsp Cumin
  • 1 tbsp Red pepper flakes
  • 1 ½ cup Water

Ingredients

  • 2 medium Onions (diced)
  • 2 tbsp Oil
  • 500 g Potatoes (mashed)
  • 1 bunch Cilantro (minced)
  • Salt & Pepper
  • Coriander
  • Red pepper flakes

Preparation

In a pan

  • Saute the onions in the oil.
  • Stir in the mashed potato right before the onions brown.
  • Incorporate in all the spices.
  • Add the cilantro, stir once and turn off heat.

Let cool.

Potato Stuffing

Ingredients

  • 7-8 medium Potatoes (boiled, peeled & smashed)
  • 2 large Onions (diced)
  • 1/3 cup Vegetable oil
  • Salt & Pepper
  • 1 tsp Red pepper flakes
  • 1/2 tsp Cumin

Preparation

In a pan

  • Sweat the onions.
  • When the onion starts to brown, stir in the spices and incorporate the mashed potato.
  • Cook stirring until all the oil is absorbed and the spices are incorporated well.

Let cool.

Prepare the stuffing first. Then prepare the kibbeh as follows:

In a deep tray

  • Soak all the Ingredients for 15 mins.
  • Knead well until it gathers into a dough.
  • Shape into kibbeh form filling them with the filling you have prepared.

In a deep fryer

  • Deep fry the kibbeh until brown.
