Baba Ghannouj | Eggplant salsa
- 1 large eggplant, roasted (drained, skinned, & minced)
- 1 small onion (minced)
- 1 small red chili pepper (minced)
- Lemon zest - to taste
- Lemon juice - to taste
- olive oil
- red pepper flakes
In a bowl
- Incorporate all the ingredients with a spoon.
Serve with a drizzle of olive oil and a sprinkle of red pepper flakes.
