This is a healthy salad rich in vitamins and minerals. The lentil proteins provide energy for the day. You can have this salad as breakfast or as a healthy snack. Enjoy!
- 1 cup Lentils, green (boiled and drained)
- 1 small Onion (diced)
- 1 large Carrot (shredded)
- 1 large Cucumber (diced)
- 1 large Tomato (seeded & diced)
- 1 medium Lemon (zested & juiced)
- 1/4 cup Olive oil
- 1 tsp Sumac
- 1 tsp Cumin
- 1 tsp Red pepper flakes
- ½ tsp Pepper
- Mix all ingredients in a bowl.
Refrigerate for 15 mins to bring out all the flavors.
