Ingredients

  • 1 cup bulgur, fine
  • a bunch of parsley (minced)
  • 1 large onion (diced)
  • 2,3 stalks celery (diced)
  • 2 medium tomatoes (diced)
  • lemon (juiced)
  • 1/2 cup vegetable oil
  • 1/2 cup water

Condiments & Spices

  • 1 tbsp tomato paste
  • 1 tsp pomegranate molasses
  • Salt & pepper
  • 1/2 tsp red pepper flake
  • 1/2 tsp sumac
  • 1/2 tsp dried mint
  • 1/2 tsp cumin

Components

Preparation

In a pan

  • Sweat the onions and the celery with some salt.
  • Add the tomatoes, condiments and spices and boil.
  • Add the water and cook until the tomato has melted.
  • Stir in the bulgur.
  • Cook for a few minutes and turn the heat off.

Let cool.

  • Add the Parsley before you serve.
